Today I am making my favorite kind of Tacos, Veggie Tacos. Tacos might very well be my favorite food. They are so versatile, you can use almost any ingredient for taco fillings. I think tacos are the ultimate minimalist food. You don’t need lots of fancy cooking equipment to cook tacos. Plus any taco is tasty!
Here I am sharing how I make tacos, but remember, the filling and toppings can change with whatever looks fresh in the grocery store. Above all, know that even living out of a van, we can make healthy, flavorful food. And save money doing it. Even if I did splurge a bit on sour cream and Yellowbird Serrano Condiment.
